By: Madalyn Dudley

“Friendsgiving” holiday parties have become all the rage among young adults looking to battle busy schedules to gather around the holidays. The amount of functions you can be invited to this time of year is endless, but coming up with multiple dishes you can make on a budget has the ability to ruin your festive attitude.

No matter what your plans are this holiday season, it is good to have a few simple recipes in your mind so that you are prepared for any invites that may come your way. These are a couple of recipes that will leave your friends begging you for more by the end of the event.

Chili and Rosemary Roasted Nuts

If your friends are planning a gathering that features more snacks than meals, these spiced nuts are the perfect recipe to ensure you do not overdo it, but bring something tasty to the table.

  • 2 Cups almonds

  • 2 Cups cashews

  • 2 Cups pistachios

  • 1 ½ Tbsp. avocado oil or olive oil

  • 1 ½ tsp. chili powder

  • ½ tsp. ground cumin

  • Juice of ½ lime

  • 1 Tbsp. chopped fresh rosemary

Instructions

  • Preheat oven to 325℉.

  • Line a large rimmed baking sheet with parchment paper. Pour nuts onto the baking sheet.

  • In a small bowl combine oil, chili powder, cumin, lime juice, and rosemary. Pour over nuts and mix until nuts are evenly coated with spice mixture.

  • Roast at 325℉ for 12-15 minutes, stirring every 5 minutes to avoid burning.

  • Remove pan to a cooling rack on the counter and allow nuts to cool, stirring occasionally, until completely cooled.

Green Bean Bundles

This side item pairs nicely with any entree and gives a fun twist to the classic holiday dish.

  • 10 slices of bacon

  • 1 pound fresh green beans

  • 1 cube beef bouillon

  • 4 tablespoons Worcestershire sauce

  • 2 teaspoons soy sauce

  • 2 tablespoons butter

  • 2 tablespoons brown sugar

  • ½ teaspoon garlic powder

Instructions

  • Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).

  • Place bacon in a large, deep skillet. Cook over medium-high heat until partially cooked. Drain, cut each piece in half, and set aside.

  • Bring a large pot of water to a boil. Place the green beans on a rack or special steamer basket over the boiling water. Cover with a lid so that the steam does not escape. Steam for a few minutes until the green beans are done. Set the green beans aside. Reserve about 2 cups of the water and dissolve the bouillon cube in it.

  • Take a bundle of green beans (4 or 5) and wrap them with a piece of bacon. Secure with a toothpick if necessary. Place the bundles in a shallow baking dish.

  • In a saucepan over medium heat, combine the reserved stock with the Worcestershire sauce, soy sauce, butter, brown sugar, and garlic powder. Stir until the sugar is dissolved.

  • Pour the sauce over the bundles and bake in a preheated 350 degrees Fahrenheit (175 degrees Celsius) oven for 20 minutes or until the bacon is done.
