What would the holidays be without everyone’s favorite comfort foods? Whether you need an easy dish to fake your way through a dinner party or a seasonal classic to ration while you hunker down at home, we have you covered. Since it is the season of giving, we have gathered everything you need to set the table this year with our staff’s tried and true recipes.

3. Rigatoni Alla Vodka

“I have always grown up around Italian food. Pasta, Pizza, and Italian ingredients filled my home as a kid. I am forever grateful for the memories I have of getting up early to make a red sauce with my mom and waiting patiently for dinner time when we could all enjoy it. My mom says she has been making this penne/rigatoni alla vodka recipe “forever”. (The rigatoni came along recently because I believe it is the superior pasta.) We have had this meal for birthdays, Christmas dinners, Sunday night family gatherings, and even just weeknights when we are craving some pasta. It is easy, delicious, and brings people together.”

For this family recipe, you will need the following ingredients:

  • ½ stick of salted butter

  •  1 sweet onion 

  • 1  large can of crushed tomatoes 

  • ¼  cup of vodka 

  • 1 cup of heavy cream 

  • 1 pound of Rigatoni Parmesan cheese

  •  Fresh parsley (optional)

  • Crushed red pepper (optional)

In a large skillet over medium heat, cook chopped onion in hot butter until tender. Do not brown. Add tomatoes and cook for five minutes. Add vodka and bring to a boil. Reduce heat and cook for an additional 10 minutes. Add cream and bring to a boil. Lower heat and stir until all ingredients are mixed well. Mix into pasta cooked al dente. Top with parmesan, fresh parsley, and red pepper to taste.

While these recipes are perfect to incorporate into your holiday party spreads, we will gladly look the other way if you keep them all to yourself instead. Just remember that all the above are best served with fuzzy socks, a heated blanket, and a solid holiday movie lineup.
